I got a theory Americans celebrate it because some hispanic and mexicans that remember and hold on to their culture celebrate it and either got invited or saw it and like any true american stole the idea maybe used it as an excuse for a day off work and then misinterpreted the idea of why it was celebrated. That being said I don't care.

Americans will take anybody’s holidays and celebrations, twist it and ruin it and then call it their own. They’re too ill educated to know why people celebrate these specific days but just want an excuse to do something extra
I think chicanos choose it as some kind of hoky day? Not sure why tho, we dont celebrate it in Mexico. Its not even official, so we dont get the day.

From his Instagram Peach Lemonade 4-5 Ripe Peaches, diced 4-5 Lemons, juiced 1c. Granulated Sugar (adjust to taste) 6c. Wate, divided 3 cups each Ginger, 1 inch Fresh Mint, for garnish Clean peaches and lemons with cold water. To a pot, combine three cups of water, sugar, peaches, and ginger. Mix, and bring to a boil. Once boiling, remove from heat and allow liquid to cool completely, preferably room temperature. Transfer peach mixture to a blender. Blend on high until smooth. Strain liquid through a mesh strainer. To a pitcher, combine peach juice, lemonade and three cups of water. Mix, serve over ice with fresh mint. Enjoy!

Probably not the reason why, but the reason Americans SHOULD appreciate Cinco de Mayo is because the battle of Pueblo actually contributed greatly to the Union winning the American civil war (the French were going to support the confederacy after the battle but they lost to a smaller, ill-equipped army in Pueblo)
Americans celebrate it because "americans" come from all over the world and ethnicities and some are probably from Mexico. Same concept for St. Patrick's Day.

Some people celebrate Cinco de Mayo because there are real indigenous American Mexicans that have dark brown skin(mexico is a part of America). Others celebrate it to have something to say and do in their purposeless lives, etc.
